Masala Egg Bhurji Quesadilla

INGREDIENTS


Wheat flour - 300 grams

Salt - 1/2 teaspoon

Oil - 2 teaspoons

Water - 160 milliliters

Oil - 30 milliliters

Butter - 1 tablespoon

Cumin - 1 teaspoon

Ginger - 1 1/2 teaspoons

Green chili - 1 teaspoon

Onions - 115 grams

Tomato - 130 grams

Turmeric - 1/2 teaspoon

Red chili - 1 teaspoon

Salt - 1 teaspoon

Pav bhaji masala - 1 teaspoon

Garam masala - 1/2 teaspoon

Eggs - 5

Coriander - 1 tablespoon

Red chili sauce - to taste

Chaat masala - to taste

Butter - for brushing

PREPARATION

1. In a mixing bowl, add 300 grams wheat flour, 1/2 teaspoon salt, 2 teaspoons oil, 160 milliliters water and knead it into a smooth soft dough.

2. Rest the dough for 15 minutes.

3. Take a ball from dough and flatten it with the help of a rolling pin.

4. Place it on a hot tawa and cook moderate heat until it turns golden brown in color from both sides.

5. Remove it from heat and keep aside.

6. Heat 30 milliliters oil, 1 tablespoon butter in a skillet, add 1 teaspoon cumin and stir well.

7. Add 1 1/2 teaspoons ginger and stir again.

8. Then, add 1 teaspoon green chili, 115 grams onions and fry till translucent or until it turns golden brown in color.

9. Now, add 130 grams tomato and saute until it turns soft and pulpy.

10. Cook for 5 - 7 minutes on medium heat.

11. Add 1/2 teaspoon turmeric and stir well.

12. Add 1 teaspoon red chili, 1 teaspoon salt, 1 teaspoon pav bhaji masala, 1/2 teaspoon garam masala and mix it well.

13. Then, add 5 eggs and mix it well.

14. Cook for 5 - 7 minutes on medium heat.

15. Add 1 tablespoon coriander and mix it well.

16. Remove it from heat and keep aside.

17. Take the prepared roti and spread some red chili sauce on it.

18. Sprinkle some chaat masala on top of it.

19. Add the prepared bhurji and spared it evenly.

20. Place the another roti on top of it.

21. Heat some butter on a tawa and place the prepared quesadilla on it.

22. Brush it with butter and cook until it turns golden brown in color from both sides.

23. Remove it from heat and cut into slices.

24. Serve.
