Mini Palak Paneer Pizza

Yeast - 1 1/2 teaspoons

Sugar - 1 tablespoon

Warm water - 45 milliliters

All purpose flour - 300 grams

Salt - 1 teaspoon

Warm water - 150 milliliters

Oil - 2 tablespoons

Paneer - 440 grams

Water - 1.5 litres

Spinach - 625 grams

Tomato - 300 grams

Oil - 1 tablespoon

Butter - 30 grams

Garlic - 1 tablespoon

Ginger - 2 teaspoons

Onions - 100 grams

Red chili - 1 teaspoon

Cumin powder - 1/2 teaspoon

Coriander powder - 1 teaspoon

Turmeric - 1/2 teaspoon

Garam masala - 1 teaspoon

Salt - 1 teaspoon

Water - 150 milliliters

Fresh cream - 120 grams

Mozzarella cheese - to taste

Oregano - to taste

Chilli flakes - to taste

PREPARATION

1. In a mixing bowl, add 1 1/2 teaspoons yeast, 1 tablespoon sugar, 45 milliliters warm water and mix it well.

2. Rest the mixture for 5 minutes.

3. Then, add 300 grams all purpose flour, 1 teaspoon salt, 150 milliliters warm water and knead it into a smooth soft dough.

4. Rest the dough for 2 hours.

5. Heat 2 tablespoons oil in a skillet, add 440 grams paneer and mix it well.

6. Cook until it turns golden brown in color.

7. Remove it from heat and keep aside.

8. Heat 1.5 litres water in a heavy skillet and bring it to a boil.

9. Add 625 grams spinach and blanch the spinach for 5 - 7 minutes.

10. Transfer the spinach in a blender, add 300 grams tomato and blend it into a smooth puree.

11. Heat 1 tablespoon oil, 30 grams butter in a skillet, add 1 tablespoon garlic, 2 teaspoons ginger and stir for 1 -2 minutes.

12. Then, add 100 grams onions and fry till translucent.

13. Add 1 teaspoon red chili, 1/2 teaspoon cumin powder, 1 teaspoon coriander powder, 1/2 teaspoon turmeric, 1 teaspoon garam masala, 1 teaspoon salt and mix it well.

14. Now, add the blended mixture and mix it well.

15. Cook for 3 - 5 minutes on medium heat.

16. Add 150 milliliters water and mix it well.

17. Then, add 120 grams fresh cream and mix it again.

18. Cook for 3 - 5 minutes on medium heat.

19. Now, add the cooked paneer in it and mix it well.

20. Cook for another 3 - 5 minutes on medium heat.

21. Remove it from heat and keep aside.

22. Take a ball from dough and flatten it with the help of a rolling pin.

23. Place it on a baking tray.

24. Prick the base with the help of a fork.

25. Add the prepared palak paneer on it.

26. Top with mozzarella cheese.

27. Sprinkle oregano and chilli flakes on top of it.

28. Preheat the oven to 400°F/200°C. Bake for 20 minutes or until the cheese is melted.

29. Serve.
