Mini Sweet Potato Samosa

Olive oil - 1 1/2 tablespoons
Ginger - 1 teaspoon
Garlic - 1 teaspoon
Onions - 95 grams
Turmeric - 1/2 teaspoon
Curry powder - 1 teaspoon
Cumin powder - 1/2 teaspoon
Cinnamon powder - 1/4 teaspoon
Salt - 1 teaspoon
Grated sweet potatoes - 350 grams
Green chili - 1/2 tablespoon
Green peas - 90 grams
Water - 80 milliliters
Lemon juice - 2 teaspoons
Coriander - 2 tablespoons
Black pepper - 1/4 teaspoon
Spring roll sheets
Water
Oil - for brushing
Cumin seeds - to taste
PREPARATION
1. Heat 1 1/2 tablespoons olive oil in a pot, add 1 teaspoon ginger, 1 teaspoon garlic and saute for 2 - 3 minutes.
2. Add 95 grams onions and fry till translucent.
3. Then, add 1/2 teaspoon turmeric and stir well.
4. Now, add 1 teaspoon curry powder, 1/2 teaspoon cumin powder, 1/4 teaspoon cinnamon powder, 1 teaspoon salt and mix it well.
5. Add 350 grams grated sweet potatoes and mix it well.
6. Add 1/2 tablespoon green chili, 90 grams green peas, 80 milliliters water and mix it well.
7. Cover it with lid and cook for 10 - 15 minutes.
8. Now, add 2 teaspoons lemon juice, 2 tablespoons coriander, 1/4 teaspoon black pepper and mix it well.
9. Remove it from heat and transfer the mixture into a bowl.
10. Take a spring roll sheet and put some potato mixture on top of it.
11. Brush two adjacent edges of sheet with water, fold into a triangle, and press the edges together to seal.
12. Place it on a baking tray and brush it with oil.
13. Sprinkle cumin seeds on top of it.
14. Preheat the oven to 350°F/180°C. Bake for 15 - 20 minutes or until the top is golden brown.
15. Serve hot with ketchup.
