Oil - 1 tablespoon
Cumin - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Coriander powder - 1 teaspoon
Green chili - 1
Ginger paste - 1/2 teaspoon
Boiled mashed potatoes - 250 grams
Red chili - 1/4 teaspoon
Dry mango powder - 1/2 teaspoon
Salt - 1/2 teaspoon
Garam masala - 1/4 teaspoon
Coriander - 10 grams
Gram flour - 100 grams
Water - 250 milliliters
Salt - 1/2 teaspoon
Carom seeds - 1/2 teaspoon
Red chili - 1/4 teaspoon
Green chili - 250 grams
Baking soda - 1/4 teaspoon
PREPARATION
1. Heat 1 tablespoon oil in a pan, add 1/2 teaspoon cumin, 1/4 teaspoon turmeric and stir well.
2. Add 1 teaspoon coriander powder, 1 green chili, 1/2 teaspoon ginger paste and saute for 2 - 3 minutes.
3. Now, add 250 grams boiled mashed potatoes and mix it well.
4. Add 1/4 teaspoon red chili, 1/2 teaspoon dry mango powder, 1/2 teaspoon salt, 1/4 teaspoon garam masala, 10 grams coriander and mix it well.
5. Cook for 3 - 5 minutes. Keep aside.
6. In a mixing bowl, add 100 grams gram flour, 250 milliliters water and whisk it well to make a thick batter.
7. Add 1/2 teaspoon salt, 1/2 teaspoon carom seeds, 1/4 teaspoon red chili and mix it well.
8. Rest the batter for 10 minutes.
9. Wash 250 grams green chilies and make a slit in the center, keeping the back side intact.
10. Stuff little of this mixture inside all the green chilies.
11. In the batter, add 1/4 teaspoon baking soda and mix it well.
12. Dip the stuffed green chilies in the batter and coat properly and then gently drop in the hot oil.
13. Deep fry until golden brown. Drain it on an absorbent paper.
14. Serve hot.
