Momos Kebab

 

Servings - 3 - 4

 

INGREDIENTS

All purpose flour - 200 grams

Salt - 1 teaspoon

Oil - 1 tablespoon

Water - 100 milliliters

Oil - 1 1/2 teaspoon

Garlic - 2 teaspoons

Ginger - 2 teaspoons

Onions - 50 grams

Carrots - 45 grams

Cabbage - 55 grams

Salt - 1/2 teaspoon

Black pepper - 1/4 teaspoon

Soy sauce - 1 teaspoon

Oil - for frying

Hung yogurt - 150 grams

Roasted gram flour - 50 grams

Ginger paste - 1 1/2 teaspoons

Salt - 1 teaspoon

Red chili powder - 1/2 teaspoon

Paprika - 1/4 teaspoon

Cumin masala - 1/2 teaspoon

Chaat masala - 1/2 teaspoon

Garam Masala - 1/4 teaspoon

Turmeric - 1/4 teaspoon

Lemon juice - 1 tablespoon

Mustard oil - 2 tablespoons

Oil - for frying

 

PREPARATION

  1. In a mixing bowl, add 200 grams all purpose flour, 1 teaspoon salt, 1 tablespoon oil, 100 milliliters water and knead it into a smooth soft dough.
  2. Heat 1 1/2 teaspoon oil in a pan, add  2 teaspoons garlic, 2 teaspoons ginger and saute for 2 - 3 minutes.
  3. Add 50 grams onions and fry till translucent or until it turns golden brown in color.
  4. Now, add 45 grams carrots, 55 grams cabbage, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 teaspoon soy sauce and mix it well to combine.
  5. Remove it from heat.
  6. Take a ball from dough and flatten it with the help of a rolling pin.
  7. Add the prepared stuffing on it and shape them like a momo. (See Video).
  8. Place it in a steamer and steam for 15 minutes.
  9. Remove it from steamer.
  10. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy.
  11. Now, in a mixing bowl, add 150 grams hung yogurt, 50 grams roasted gram flour, 1 1/2 teaspoons ginger paste, 1 teaspoon salt, 1/2 teaspoon red chili, 1/4 teaspoon paprika, 1/2 teaspoon cumin masala, 1/2 teaspoon chat masala, 1/4 teasopoon garam masala, 1/4 teaspoon turmeric, 1 tablepoon lemon juice, 2 tablespoons mustard oil and mix it well.
  12. Then, skewer the momos and onion slice and brushing with prepared mixture.
  13. Heat sufficient oil in a skillet and shallow fry these until golden brown and crispy from all sides.
  14. Serve with green chutney.
