Nachos Puri With White Sauce

INGREDIENTS
Wheat flour - 150 grams
Semolina - 30 grams
Salt - 1/4 teaspoon
Water - 130 milliliters
Onions - 50 grams
Tomato - 70 grams
Bell pepper - 140 grams
Spring onions - 2 tablespoons
Salt - 1/2 teaspoon
Chilli flakes - 1 teaspoon
Oregano - 1 teaspoon
Ketchup - 40 grams
Wheat flour - for dusting
Butter - 25 grams
All purpose flour - 25 grams
Milk - 250 milliliters
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Red chili - 1/8 teaspoon
Processed cheese - 2 tablespoons
Spring onions - for garnishing
PREPARATION
1. In a mixing bowl, add 150 grams wheat flour, 30 grams semolina, 1/4 teaspoon salt and mix it well.
2. Add 130 milliliters water and knead it into a smooth soft dough.
3. Rest the dough for 15 - 20 minutes.
4. In a mixing bowl, add 50 grams onions, 70 grams tomato, 140 grams bell pepper, 2 tablespoons spring onions, 1/2 teaspoon salt, 1 teaspoon chilli flakes, 1 teaspoon oregano, 40 grams ketchup and mix it well.
5. Take a ball fro dough an dust it with flour.
6. Flatten it with the help of a rolling pin.
7. Cut out circles from it.
8. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy.
9. Drain it on an absorbent paper and keep aside.
10. Heat 25 grams butter in a deep pan, add 25 grams all purpose flour and mix it well.
11. Cook for 2 - 3 minutes on medium heat.
12. Add 250 milliliters milk and mix it well.
13. Bring it to a boil.
14. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/8 teaspoon red chili and mix it well.
15. Now, add 2 tablespoons processed cheese and mix it again.
16. Cook until the mixture thickens.
17. Remove it from heat and keep aside.
18. Take the prepared puri and crack it from top.
19. Fill it with the prepared stuffing.
20. Drizzle some prepares sauce on top of it.
21. Garnish with spring onions.
22. Serve.
