INGREDIENTS
Dry red chili - 6 - 7
Warm water - 60 milliliters
Water - 800 milliliters
Cauliflower - 130 grams
Carrot - 90 grams
Green peas - 95 grams
Tomato - 130 grams
Bell pepper - 100 grams
Salt - 1 teaspoon
Pav bhaji massala - 1 teaspoon
Boiled potatoes - 250 grams
Butter - 1 tablespoon
Oil - 30 milliliters
Butter - 1 tablespoon
Cumin - 1 teaspoon
Asafoetida - 1/4 teaspoon
Ginger paste - 1 teaspoon
Green chili- 1 teaspoon
Pav bhaji masala - 1 1/2 teaspoons
Paprika - 1/4 teaspoon
Salt - 1 teaspoon
Garam masala - 1 teaspoon
Water - 450 milliliters (divided)
Lemon juice - 30 milliliters
Dry fenugreek leaves - 1 teaspoon
Coriander - 1 tablespoon
Butter - 1 teaspoon
Coriander - 2 teaspoons
Pav bhaji masala - 1/4 teaspoon
Pav buns - 2
PREPARATION
1. In a mixing bowl, add 6 -7 dry red chili, 60 milliliters warm water and soak for 30 minutes.
2. Boil 800 milliliters water in a pan, add 130 grams cauliflower, 90 grams carrot, 95 grams green peas and bring it to boil for 7 - 8 minutes.
3. In a pan, add 130 grams tomato, 100 grams bell pepper and cook for 5 minutes.
4. Then, add boiled veggies and cook 2 - 3 minutes.
5. Add, 1 tablespoon prepared blended dry red chili paste, 1 teaspoon salt, 1 teaspoon Pav bhaji masala and mix it well.
6. Now, add 250 grams boiled potatoes, 1 tablespoon butter and cook for 2 - 3 minutes.
7. Now, lightly mash the veggies with the help of a food masher.
8. Then, in a another pan heat 30 milliliters oil, 1 tablespoon butter, Add 1 teaspoon cumin, 1/4 teaspoon asafoetida, 1 teaspoon ginger paste, 1 teaspoon green chili and saute 1- 2 minutes.
9. Add 1 1/2 tablespoons prepared blended dry red chili paste, 1 1/2 teaspoons Pav bhaji masala, 1/4 teaspoon paprika, 1 teaspoon salt, 1 teaspoon garam masala and mix it well.
10. Now, add prepared mixture, 200 milliliters water and cook 1 - 2 minutes.
11. Add, 250 milliliters water, and mash the veggies with the help of a food masher.
12. Then, add 30 milliliters lemon juice, 1 teaspoon dry fenugreek leaves, 1 tablespoon coriander and mix it well.
13. Heat 1 teaspoon butter in a pan, add 2 teaspoons coriander, 1/4 teaspoon pav bhaji masala and stir well.
14. Now, place the pav buns and coat it completely from both sides with the butter mixture.
15. Place the pav buns on a plate.
16. Add the prepared bhaji on the serving plate.
17. Garnish with coriander.
18. Serve.
