Olive Oil Pistachio Biscotti

 

Servings - 3 - 4

 

INGREDIENTS
All purpose flour - 300 grams

Salt - 1/2 teaspoon

Baking powder - 1 teaspoon

Milk - 30 milliliters

Vinegar - 1 teaspoon

Ryca olive oil - 180 milliliters

Brown sugar - 150 grams

Vanilla extract - 1 teaspoon

Pistachios - 50 grams

 

PREPARATION

  1. In a bowl, add 300 grams all purpose flour, 1/2 teaspoon salt, 1 teaspoon baking powder and mix it well. Keep aside.
  2. In a another bowl, add 30 milliliters milk, 1 teaspoon vinegar and mix it well. Keep aside.
  3. In a mixing bowl, add 180 milliliters ryca olive oil, 150 grams brown sugar and mix it well.
  4. Then, addd 1 teaspoon vanilla extract, prepared milk mixture and mix it well.
  5. Now, add the prepared flour and mix it well.
  6. Add 50 grams pistachios and mix it again.
  7. Refrigerate the dough for 25 - 30 minutes.
  8. Remove it from refrigerator and tuck the dough well.
  9. Divide it into two equal portions.
  10. Take one portions and make a log of it.
  11. Place it on a baking tray.
  12. Preheat the oven to 350°F/180°C. Bake for about 35 minutes.
  13. Remove it from oven and allow it to cool for about 10 - 12 minutes.
  14. Cut it into slices and place it on a baking tray.
  15. Preheat the oven to 350°F/180°C. Bake for about 12 minutes.
  16. Remove it from oven and flip it to the other side.
  17. Again bake for about 12 minutes.
  18. Remove it from oven.
  19. Serve.
