INGREDIENTS
(For Poha Uttapam)
Flattened rice - 100 grams
Warm water - 400 milliliters
Semolina - 80 grams
Curd - 200 grams
Salt - 1 teaspoon
Water - 200 milliliters
Onions - 50 grams
Green beans - 50 grams
Carrots - 50 grams
Bell pepper - 50 grams
Green chili - 1 teaspoon
Coriander - 1 tablespoon
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Oil - for shallow frying and brushing
Chilli flakes - to taste
(For Green Chutney)
Coriander - 10 grams
Mint - 10 grams
Green chili - 1 tablespoon
Ginger - 1 tablespoon
Cumin - 1 teaspoon
Black salt - 1 teaspoon
Sugar - 1 teaspoon
Lemon juice - 1 teaspoon
Water - 50 milliliters
PREPARATION
(For Poha Uttapam)
1. In a bowl, add 100 grams flattened rice, 400 milliliters warm water and soak for 5 minutes.
2. Strain the flattened rice in a bowl and transfer this into a blender.
3. Blend it into a paste and transfer this into a mixing bowl.
4. Add 80 grams semolina, 200 grams curd, 1 teaspoon salt, 200 milliliters water and mix it well to make a thick batter.
5. Rest the batter for 30 minutes.
6. In a mixing bowl, add 50 grams onions, 50 grams green beans, 50 grams carrots, 50 grams bell pepper, 1 teaspoon green chili, 1 tablespoon coriander, 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well. Keep aside.
7. Heat some oil in a pan, add the prepared batter on it and spread it evenly.
8. Add some prepared veggies on it.
9. Sprinkle some chilli flakes on top of it.
10. Brush it with oil.
11. Cover it with lid and cook for about 8 - 10 minutes on medium heat.
12. Open the lid and flip it gently.
13. Cook for 2 - 3 minutes on medium heat or until it turns golden brown in color.
14. Remove it from heat and keep aside.
(For Green Chutney)
1. In a blender, add all the ingredients and blend it into a puree.
2. Serve with prepared poha uttapam.
