Potato Garlic Rings

Servings - 2 - 3

INGREDIENTS
Semolina - 100 grams
Butter - 1 tablespoon
Garlic - 1 tablespoon
Chilli flakes - 1 teaspoon
Oregano - 1/2 teaspoon
Salt - 1 teaspoon
Water - 200 milliliters
Boiled mashed potatoes - 250 grams
Corn flour - 2 tablespoons
Semolina - 2 tablespoons
Coriander - 1 tablespoon
Oil - for frying
Coriander - for garnishing

PREPARATION


1. Take a pan, add 100 grams semolina and dry roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
2. Remove it from heat and transfer this into a blender.
3. Blend it into a fine powder.
4. Heat 1 tablespoon butter in a pan, add 1 tablespoon garlic and stir well.
5. Add 1 teaspoon chilli flakes, 1/2 teaspoon oregano, 1 teaspoon salt and mix it well.
6. Then, add 200 milliliters water and mix it again.
7. Bring it to a boil.
8. Now, add the blended mixture and mix it well.
9. Cook until the mixture thickens.
10. Add 250 grams boiled mashed potatoes and mix it well.
11. Cook for 3 - 5 minutes on medium heat.
12. Remove it from heat and allow it to cool for about 5 - 7 minutes.
13. Transfer this into a mixing bowl, add 2 tablespoons corn flour, 2 tablespoons semolina, 1 tablespoon coriander and mix it well.
14. Take a ball from dough and dust it with flour.
15. Flatten it with the help of a rolling pin. Cut out the rings from it.
16. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
17. Drain it on an absorbent paper.
18. Garnish with coriander.
19. Serve hot with ketchup.
