INGREDIENTS


Puffed Rice Upma

Servings - 2 - 3

INGREDIENTS

Oil - 2 tablespoons
Mustard seeds - 1/2 teaspoon
Cumin - 1/2 teaspoon
Peanuts - 30 grams
Curry leaves - 10 - 12
Ginger - 1 teaspoon
Onions - 140 grams
Green chili - 1 teaspoon
Tomato - 250 grams
Green peas - 60 grams
Turmeric - 1/2 teaspoon
Red chili - 1/4 teaspoon
Salt - 1 teaspoon
Black pepper - 1/2 teaspoon
Dry mango powder - 1 teaspoon
Puffed rice - 80 grams
Lemon juice - 1 1/2 tablespoons
Coriander - 2 tablespoons

PREPARATION


1. Heat 2 tablespoons oil in a heavy skillet, add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin, 30 grams peanuts and roast for 2 - 3 minutes on medium heat.
2. Add 10 - 12 curry leaves, 1 teaspoon ginger and stir for 2 - 3 minutes.
3. Then, add 140 grams onions and fry till translucent or until it turns golden brown in color.
4. Add 1 teaspoon green chili and stir well.
5. Now, add 250 grams tomato and mix it well.
6. Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
7. Add 60 grams green peas and mix it well.
8. Add 1/2 teaspoon turmeric, 1/4 teaspoon red chili, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon dry mango powder and mix it well.
9. Then, add 80 grams puffed rice and mix it again.
10. Cook for 5 - 7 minutes on medium heat.
11. Add 1 1/2 tablespoons lemon juice, 2 tablespoons coriander and mix it well.
12. Cook for another 3 - 5 minutes on medium heat.
13. Remove it from heat.
14. Garnish with coriander.
15. Serve hot.
