INGREDIENTS
All purpose flour - 240 grams
Semolina - 100 grams
Baking powder - 1/4 teaspoon
Water - 200 milliliters
Boiled mung bean - 160 grams
Boiled brown chickpea - 170 grams
Boiled potatoes - 200 grams
Salt - 1 teaspoon
Sugar - 1 teaspoon
Papdi - to taste
Yogurt - to taste
Chaat masala - to taste
Red chili - to taste
Tamarind chutney - to taste
Green chutney - to taste
Sev - to taste
Pomegranate - to taste
Coriander - to taste

 

PREPARATION


1. In a mixing bowl, add 240 grams all purpose flour, 100 grams semolina, 1/4 teaspoon baking powder and mix well.
2. Add 200 milliliters water and knead it into a smooth soft dough. 
3. Divide the dough into equal portions. Roll out into little thick big puris using little flour for rolling.
4. Heat sufficient oil in a heavy skillet. Deep fry until crispy and golden brown. Drain it on an absorbent paper.
5. In a bowl, add 160 grams boiled mung bean, 170 grams boiled brown chickpea, 200 grams boiled potatoes, 1 teaspoon salt, 1 teaspoon sugar and mix well to combine.
6. Make a hole in the center of the kachori and fill it with the mixture of mung bean.
7. Then add crushed paid and top with yogurt. Sprinkle some chaat masala and red chili.
8. Top with tamarind chutney and green chutney.
9. Garnish with sev, pomegranate and coriander.
10. Serve immediately.
