Raw Mango Papad

Servings - 10

INGREDIENTS
Raw mangoes - 450 grams 
Water - 150 milliliters
Sugar - 150 grams 
Black salt - 1 teaspoon
Cumin powder - 1 teaspoon
Black pepper - 1 teaspoon
Chaat masala - 1 tablespoon
Salt - 1/2 teaspoon
Organic food color - 1/4 teaspoon
Chilli flakes - 1/2 teaspoon

PREPARATION


1. In a pan, add 450 grams chopped raw mangoes and 150 milliliters water, Stir well. Cover and cook for 5 - 8 minutes.
2. Remove the lid, stir again, and remove from the heat. Cool for 10 - 15 minutes.
3. Transfer the mixture to a blender and blend until smooth.
4. Pour the blended mixture into a pan, add 150 grams sugar and stir until completely dissolved.
5. Add 1 teaspoon black salt, 1 teaspoon cumin powder, 1 teaspoon black pepper, 1 tablespoon chaat masala, and 1/2 teaspoon salt. Mix thoroughly to combine.
6. Add 1/4 teaspoon organic food color and 1/2 teaspoon chilli flakes. Mix well, then remove from the heat.
7. Transfer the mixture to a dish and spread it evenly. Place it in direct sunlight for 1–2 days to dry completely.
8. Once set, cut into desired pieces and roll.
9. Serve.
