Spicy Corn Fritters

INGREDIENTS

Sweet corn - 430 grams

Bell pepper - 90 grams

Spring onions - 25 grams

Coriander - 2 tablespoons

Eggs - 2

All purpose flour - 115 grams

Salt - 1 teaspoon

Black pepper - 1/2 teaspoon

Cayenne pepper - 1/2 teaspoon

Water - 60 milliliters

Butter - for shallow frying

PREPARATION

1. In a mixing bowl, add all the ingredients except water and mix it well.

2. Now, add 60 milliliters water and mix it again.

3. Heat some butter in a pan, drop spoonfuls of batter into the butter and smooth the tops.

4. Fry until golden brown and crispy from both sides.

5. Drain it on an absorbent paper.

6. Serve hot with ketchup.
