INGREDIENTS
(For Surti Locho)

Flattened rice - 30 grams
Water - 250 milliliters
Split bengal gram - 150 grams
White lentils - 50 grams
Water - 500 milliliters
Yogurt - 150 grams
Ginger - 1 1/2 teaspoons
Green chili - 1 teaspoon
Water - 60 milliliters
Salt - 1/2 teaspoon
Asafoetida - 1/4 teaspoon
Turmeric - 1/4 teaspoon
Oil - 20 milliliters
Fruit salt - 1 teaspoon
Water - 30 milliliters

(For Green Chutney)
Coriander - 15 grams
Mint - 5 grams
Green chili - 1 tablespoon
Ginger - 1/2 tablespoon
Cumin - 1 teaspoon
Black salt - 1 teaspoon
Sugar - 1 teaspoon
Lemon juice - 1 tablespoon
Water - 50 milliliters
Black pepper - to taste
Red chili - to taste

(For Masala)
Black salt - 1/4 teaspoon
Salt - 1/4 teaspoon
Red chili - 1/2 teaspoon
Dry mango powder - 1/2 teaspoon
Chaat masala - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Black pepper - 1/4 teaspoon

(For Assembling)
Oil - for garnishing
Butter - for garnishing
Prepared masala - for garnishing
Lemon juice - for garnishing
Prepared green chutney
Onions - for garnishing
Sev - for garnishing
Coriander - for garnishing

PREPARATION


(For Surti Locho)
1. In a bowl, add 30 grams flattened rice, 250 milliliters water and soak for 5 minutes.
2. In a another bowl, add 150 grams split bengal gram, 50 grams white lentils, 500 milliliters water and soak for overnight.
3. In a blender, add the soaked lentils, soaked flattened rice, 150 grams yogurt, 1 1/2 teaspoons ginger, 1 teaspoon green chili, 60 milliliters water and blend it into a paste.
4. Transfer this into a bowl, add 1/2 teaspoon salt, 1/4 teaspoon asafoetida, 1/4 teaspoon turmeric, 20 milliliters oil and mix it well.
5. Rest for 2 hours.
6. Add 1 teaspoon fruit salt, 30 milliliters water and mix it well.
7. Transfer this into a steamer dish.
8. Sprinkle some black pepper and red chili on it.
9. Place it in a steamer.
10. Steam for about 20 - 25 minutes.
11. Open the lid and remove it from steamer.

(For Green Chutney)
1. In a blender, add all the ingredients and blend it into a puree.
2. Keep aside.

(For Masala)
1. In a bowl, add all the ingredients and mix it well.
2. Keep aside.

(For Assembling)
1. Add the prepared surti locho in a serving plate.
2. Add some oil and butter on top of it.
3. Sprinkle some prepared masala and lemon juice.
4. Add some prepared green chutney on top of it.
5. Garnish with onions, sev and coriander.
6. Serve.
