Sweet Potato Hash Egg Cups

INGREDIENTS
Grated sweet potato - 60 grams
Cheddar cheese - 30 grams
Garlic powder - 1/2 tablespoon
Eggs - 6
Salt - to taste
Black pepper - to taste
Coriander - for garnishing
PREPARATION
1. In a mixing bowl, add 60 grams grated sweet potato, 30 grams cheddar cheese, 1/2 tablespoon garlic powder and mix well until combine.
2. Using a tablespoon add this mixture on the bottom of 6 muffin tins.
3. Crack a large egg on top of each cup and season with salt and black pepper to taste.
4. Preheat the oven to 350°F/180°C. Bake for 10 - 12 minutes or until eggs are at desired consistency.
5. Garnish with coriander.
6. Serve hot.
