INGREDIENTS


Sweet Potato Parcel

Servings - 12

INGREDIENTS

All purpose flour - 120 grams
Salt - 1/4 teaspoon
Oil - 1 teaspoon
Water - 60 milliliters
Sweet potato - 530 grams
Salt - 1/2 teaspoon
Oil - 4 teaspoons, divided
Garlic - 1 tablespoon
Onions - 40 grams
Sweet corns - 50 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Curry powder - 1/2 teaspoon
All purpose flour mixture - for brushing

PREPARATION


1. In a mixing bowl, add 120 grams all purpose, 1/4 teaspoon salt, 1 teaspoon oil, 60 milliliters water and knead it into a smooth soft dough.
2. Rest the dough for 20 minutes.
3. In a mixing bowl, add 530 grams sweet potatoes, 2 teaspoons oil and mix it well.
4. Transfer this into a baking tray and spread it evenly.
5. Preheat the oven to 350°F/180°C. Bake for about 20 minutes. Remove it from oven and keep aside.
6. Heat 2 teaspoons oil in a pan, add 1 tablespoon garlic and stir well.
7. Then, add 40 grams onions and fry till translucent or until it turns golden brown in color.
8. Now, add 50 grams sweet corns and mix it well.
9. Cook for 5 - 7 minutes on medium heat.
10. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon curry powder and mix it well.
11. Now, add the baked sweet potatoes and mix it well.
12. Cook for 5 - 7 minutes on medium heat.
13. Remove it from heat and keep aside.
14. Take a ball from dough and dust it with flour.
15. Flatten it with the help of a rolling pin.
16. Cut out two strips from it.
17. Place one strip on another to make a plus sign. (See Video)
18. Add the prepared mixture in the center.
19. Fold the one side and brush it with all purpose flour mixture.
20. Repeat this process until it’s done.
21. Place it on a baking tray.
22. Brush the top with all purpose flour mixture.
23. Preheat the oven to 350°F/180°C. Bake for about 25 - 30 minutes. Remove it from oven.
24. Serve hot with ketchup.
