Talumein Soup

Servings - 2 - 3

INGREDIENTS

Oil - 2 tablespoons

Cauliflower - 50 grams

Carrot - 50 grams

Cabbage - 50 grams

Spring onions - 40 grams

Boiled sweet corn - 90 grams

Vegetable stock - 1 litre

Soy sauce - 1/2 teaspoon

Sugar - 1/2 teaspoon

Salt - 1 teaspoon

Noodles - 100 grams

Black pepper - 1 teaspoon

Spring onions - for garnishing

PREPARATION

1. Heat 2 tablespoons oil in a heavy pot, add 50 grams cauliflower, 50 grams carrot, 50 grams cabbage, 40 grams spring onions and saute the veggies for 3 - 5 minutes.

2. Add 90 grams boiled sweet corn and mix it well.

3. Then, add 1 litre vegetable stock, 1/2 teaspoon soy sauce, 1/2 teaspoon sugar, 1 teaspoon salt, 100 grams noodles and mix well.

4. Cook on medium heat for 8 - 10 minutes.

5. Add 1 teaspoon black pepper and mix well.

6. Garnish with spring onions.

7. Serve.
