Tamarind Chilli Potatoes

Servings - 2 - 3

INGREDIENTS

Tamarind - 70 grams
Water - 220 milliliters
Oil - 20 milliliters
Boiled potatoes - 560 grams
Oil - 2 tablespoons
Carom seeds - 1/2 teaspoon
Garlic - 1 teaspoon
Dry red chili - 2
Curry leaves - 2 tablespoons
Cashews - 25 grams
Onions - 120 grams
Sugar - 1 tablespoon
Salt - 1 teaspoon
Coriander - 1 tablespoon

PREPARATION


1. In a bowl, add 70 grams tamarind, 220 milliliters water and soak for 30 minutes.
2. Transfer this into a blender and blend it into a puree. Keep aside.
3. Heat 20 milliliters oil in a skillet, add 560 grams boiled potatoes and mix it well.
4. Cook for 5 - 7 minutes on medium heat or until it turns golden brown in color.
5. Remove it from heat and keep aside.
6. Heat 2 tablespoons oil in a heavy skillet, add 1/2 teaspoon carom seeds, 1 teaspoon garlic, 2 dry red chili, 2 tablespoons curry leaves, 25 grams cashews and stir for 2 - 3 minutes on medium heat.
7. Then, add 120 grams onions and fry till translucent or until it turns golden brown in color.
8. Now, add the blended mixture and mix it well.
9. Add 1 tablespoon sugar, 1 teaspoon salt and mix it well.
10. Now, add the cooked potatoes and mix it again.
11. Cook for 5 - 7 minutes on medium heat.
12. Add 1 tablespoon coriander and mix it well.
13. Remove it from heat.
14. Garnish with coriander.
15. Serve hot.
