INGREDIENTS


Chickpeas - 350 grams

Water - 2 litres, divided

Salt - 1 teaspoon

Boiled chickpeas - 200 grams

Oats - 50 grams

Onions - 150 grams

Green chili - 2

Garlic - 2 tablespoons

Coriander - 2 tablespoons

Cumin powder - 1 teaspoon

Coriander powder - 2 teaspoons

Salt - 1 teaspoon

Paprika - 1 teaspoon

Baking soda - 1/8 teaspoon

Oil - for frying

Boiled chickpeas - 150 grams

Sesame seeds - 50 grams

Olive oil - 50 milliliters

Garlic - 3 cloves

Salt - 1 teaspoon

Lemon juice - 2 tablespoons

Yeast - 1 tablespoon

Powdered sugar - 1 teaspoon

Warm water - 100 milliliters

All purpose flour - 300 grams

Salt - 1 teaspoon

Water - 250 milliliters

Oil - 2 teaspoons

Beetroot - 25 grams

Cucumber - 25 grams

Carrot - 25 grams

Salt - 1/2 teaspoon

Powdered sugar - 1/2 teaspoon

Vinegar - 1 teaspoon

Ketchup - to taste

PREPARATION

1. In a bowl, add 350 grams chickpeas, 1 litre water and soak for overnight.

2. Take a pressure cooker, add soaked chickpeas, 1 litre water, 1 teaspoon salt and mix it well.

3. Cover it with lid and cook until you hear 4 - 5 whistles.

4. Open the lid and remove it from heat.

5. Drain the chickpeas and transfer this into a blender.

6. Add 50 grams oats, 100 grams onions, 2 green chili, 2 tablespoons garlic, 2 tablespoons coriander, 1 teaspoon cumin powder, 2 teaspoons coriander powder, 1 teaspoon salt, 1 teaspoon paprika, 1/8 teaspoon

baking soda and blend welle.

7. Transfer this into a bowl.

8. Take some mixture in your hands and shape it into a tikki.

9. Heat sufficient oil in a deep fryer and deep fry these until golden brown and crispy.

10. Drain it on an absorbent paper. Keep aside.

11. In a blender, add 150 grams boiled chickpeas, 50 grams sesame seeds, 50 milliliters olive oil, 3 garlic cloves, 1 teaspoon salt, 2 tablespoons lemon juice and blend it into a paste.

12. In a mixing bowl, add 1 tablespoon yeast, 1 teaspoon powdered sugar, 100 milliliters warm water and mix it well.

13. Rest the mixture for 5 minutes.

14. Add 300 grams all purpose flour, 1 teaspoon salt, 250 milliliters water and knead it into a smooth soft dough.

15. Add 2 teaspoons oil and tuck the dough well.

16. Rest the dough for 1 hour.

17. In a bowl, add 25 grams beetroot, 25 grams cucumber, 25 grams carrots, 1/2 teaspoon salt, 1/2 teaspoon powdered sugar, 1 teaspoon vinegar and mix it well.

18. Take a ball from dough and flatten it with the help of a rolling pin.

19. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.

20. Flip it gently.

21. Cook until it turns golden brown in color from both sides.

22. Remove it from heat and place it on a board.

23. Spread the prepared hummus on it.

24. Add the prepared tikki on it.

25. Add some prepared hummus and ketchup on top of it.

26. Top with prepared salad.

27. Roll it tightly.

28. Cover it with aluminium foil.

29. Serve.
