Pineapple juice - 1 cup
Ginger
Butter - 1 tablespoon
Brown sugar - 2 tablespoons
Pineapple
Mint
Lime juice - 1 tablespoon
Lime slices
Ice
Rum - 2 ounces
Soda
Caramelized pineapple
PREPARATION
1. Take a pan, add 1 cup pineapple juice, ginger and stir.
2. Bring the mixture to boil and remove the pan from heat.
3. Heat 1 tablespoon butter in a pan until starting to foam. Then add 2 tablespoons brown sugar and stir. Then add pineapple into the mixture.
4. Fry, turning once, until both sides are golden and caramelized (about 3-4 minutes). Put to one side.
5. Add mint, 1 tablespoon lime juice, lime slices, pineapple - ginger juice and muddle them using a muddler.
6. Add ice, 2 ounces rum, top with soda and stir.
7. Garnish with mint and caramelized pineapple.
8. Serve.
