Spicy Gnocchi With Roasted Red Pepper

Servings - 3

INGREDIENTS
Boiled potatoes - 300 grams 
All purpose flour - 100 grams 
Salt - 1/2 teaspoon
Water - 1 litre 
Salt - 1/2 teaspoon
Water - 500 milliliters
Olive oil - 2 tablespoons
Garlic - 1 tablespoon
Tomato paste - 60 grams 
Chilli flakes - 1 teaspoon
Roasted bell pepper - 60 grams 
Fresh cream - 130 grams 
Parmesan cheese - 40 grams
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Water - 150 milliliters
Chilli flakes - for garnishing
Parmesan cheese - for garnishing
Basil leaves - for garnishing

PREPARATION


1. In a bowl, add 300 grams boiled potatoes and mash them thoroughly using a masher.
2. Add 100 grams all purpose flour and 1/2 teaspoon salt. Knead to form a soft dough.
3. Take a small portion of the dough, press it gently against the back of a fork, and roll it down to shape the gnocchi. Repeat with the remaining dough.
4. In a skillet, bring 1 litre of water to a boil. Add 1 teaspoon salt and prepared gnocchi. Boil for 3 - 4 minutes, or until the gnocchi float to the surface.
5. Remove from heat, strain the gnocchi, rinse with cold water, and set aside.
6. Heat 2 tablespoons olive oil in a pan, add 1 tablespoon garlic and sauté for 1 minute.
7. Add 60 grams tomato paste, 1 teaspoon chilli flakes, and 60 grams roasted bell pepper. Mix well and cook for 1 - 2 minutes.
8. Add 130 grams fresh cream, 40 grams parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well cook for 1 minute.
9. Add 150 milliliters water and mix well. Cook for another 2 - 3 mi Utes over medium heat.
10. Add the cooked gnocchi to the sauce. Mix gently and cook for 1–2 minutes. Remove from heat.
11. Transfer to a serving bowl and garnish with chilli flakes, parmesan cheese, and fresh basil leaves.
12. Serve.
