INGREDIENTS

Arbi - 800 grams
Water - 400 milliliters
Gram flour - 150 grams
Red chili - 1 teaspoon
Coriander powder - 1 teaspoon
Turmeric - 1/2 teaspoon
Dry mango powder - 1 teaspoon
Cumin powder - 3/4 teaspoon
Salt - 1 teaspoon
Oil - for frying
Oil - 20 milliliters
Asafoetida - 1/4 teaspoon
Cumin seeds - 1 teaspoon
Carom seeds - 1 teaspoon
Green chili - 1 tablespoon
Lemon juice - 1 tablespoon
Coriander - 2 tablespoons
PREPARATION
1. Take a pressure cooker, add 800 grams Karbi, 400 milliliters water and cover it with lid.
2. Cook till you hear 1 whistle.
3. Remove it from heat and peel the arbi.
4. Keep aside.
5. In a bowl, add 150 grams gram flour, 1 teaspoon red chili, 1 teaspoon coriander powder, 1/2 teaspoon turmeric, 1 teaspoon dry mango powder, 3/4 teaspoon cumin powder, 1 teaspoon salt and mix it well.
6. Coat the peel arbi with flour mixture.
7. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
8. Remove it from heat and drain it on an absorbent paper.
9. Heat 20 milliliters oil in a skillet, add 1/4 teaspoon asafoetida, 1 teaspoon cumin seeds, 1 teaspoon carom seeds,1. Tablespoon green chili and stir for 1 -2 minutes.
10. Then, add the fried arbi and mix it well.
11. Cook for 5 - 7 minutes on medium heat.
12. Now, add 1 tablespoon lemon juice, 2 tablespoons coriander and mix it well.
13. Remove it from heat.
14. Serve.
