INGREDIENTS
Eggplant - 500 grams
Oil - 2 tablespoons
Onions - 50 grams
Green Chili - 1 teaspoon
Tomatoes - 100 grams
Salt - 1 1/2 teaspoons
Chili Powder - 1/2 teaspoon
Paprika - 1/4 teaspoon
Tomato Puree - 1 teaspoon
Peas - 2 tablespoons
PREPARATION
1. Heat 2 tablespoons of oil in a heavy skillet over medium heat.
2. Add 50 grams onions, 1 teaspoon green chili and sauté until onions are light brown.
3. Now add 100 grams of tomatoes and stir. Cook for 2- 3 minutes.
4. Add 1 1/2 teaspoon salt,1/2 teaspoon chili powder,1/4 teaspoon paprika and stir once again. Cook for another 2- 3 minutes.
5. Then add 500 grams of eggplant and mix well. Add 1 teaspoon tomato puree. Stir well and cover skillet with lid. Cook for 8- 10 minutes.
6. Open the lid and stir well. Garnish with coriander.
7. Serve with naan.
