Bharwa Pyaz Ki Sabzi

INGREDIENTS

Dry red chili - 10
Cumin - 1 teaspoon
Coriander seeds - 1 tablespoon
Fennel seeds - 1 tablespoon
Fenugreek seeds - 1/4 teaspoon
Peanuts - 2 tablespoons
Gram flour - 2 tablespoons
Turmeric - 2 teaspoons
Red chili - 1 teaspoon
Dry mango powder - 2 teaspoons
Salt - 1 1/2 teaspoons
Dry fenugreek leaves - 2 tablespoons
Paprika - 1 teaspoon
Oil - 2 tablespoons
Onions - 600 grams
Oil - 40 milliliters
Asafoetida - 1/4 teaspoon
Salt - 1 teaspoon
Prepared masala - 40 grams
Curd - 70 grams

PREPARATION


1. Take a pan, add 10 dry red chili, 1 teaspoon cumin, 1 tablespoon coriander seeds, 1 tablespoon fennel seeds, 1/4 teaspoon fenugreek seeds, 2 tablespoons peanuts, 2 tablespoons gram flour, 2 teaspoons turmeric, 1 teaspoon red chili, 2 teaspoons dry mango powder, 1 1/2 teaspoons salt, 2 tablespoons dry fenugreek leaves, 1 teaspoon paprika and dry roast for 5 - 7 minutes on medium heat.
2. Remove it from heat and transfer this into a blender.
3. Blend it into a fine powder.
4. Transfer this into a bowl, add 2 tablespoons oil and mix it well.
5. Take 600 grams onions and cut the onion halfway horizontally and vertically.
6. Fill it with the prepared mixture and keep aside. Do the same with all the onions.
7. Heat 40 milliliters oil in a heavy skillet, add 1/4 teaspoon asafoetida, 1 teaspoon salt and stir well.
8. Then, add the stuffed onions in it and cover it with lid.
9. Cook for about 8 - 10 minutes on medium heat.
10. Open the lid and give it a nice stir.
11. Now, add 40 grams prepared masala, 70 grams curd and mix it well.
12. Again cover it with lid and cook for about 10 minutes on medium heat.
13. Open the lid and remove it from heat.
14. Garnish with coriander.
15. Serve hot.
