Oil - 2 tablespoons
Okra - 400 grams
Oil - 2 tablespoons
Cumin - 1 teaspoon
Onions - 100 grams
Ginger garlic paste - 1 tablespoon
Green chili - 1 teaspoon
Tomato - 100 grams
Turmeric - 1/2 teaspoon
Red chili - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Yogurt - 100 grams
Garam masala - 1 teaspoon
Dry fenugreek leaves - 1 tablespoon
Salt - 1 teaspoon
Sugar - 1/4 teaspoon
Dry mango powder - 1 teaspoon
Water - 100 milliliters
Coriander - for garnishing
PREPARATION
1. Heat 2 tablespoons oil in a pan, add 400 grams okra and cook until it turns dark brown in color.
2. Remove it from heat.
3. Heat 2 tablespoons oil in a another pan, add 1 teaspoon cumin and stir well.
4. Then, add 100 grams onions and fry till translucent.
5. Add 1 tablespoon ginger garlic paste and stir for 1 - 2 minutes or until it turns golden brown in color.
6. Add 1 teaspoon green chili and stir well.
7. Now, add 100 grams tomato and saute until it turns soft and pulpy.
8. Cook for 5 - 7 minutes on medium heat.
9. Add 1/2 teaspoon turmeric, 1 teaspoon red chili, 1 teaspoon cumin powder, 1 teaspoon coriander powder and mix it well.
10. Transfer this into a blender and blend it into a smooth puree.
11. Transfer this puree into a skillet and give it a nice stir.
12. Add 100 grams yogurt and mix it well.
13. Add 1 teaspoon garam masala, 1 tablespoon dry fenugreek leaves, 1 teaspoon salt, 1/4 teaspoon sugar, 1 teaspoon dry mango powder and mix it again.
14. Then, add 100 milliliters water and stir well.
15. Bring it to a boil.
16. Now, add the cooked okra in it and mix it well.
17. Cook for 5 - 7 minutes on medium heat.
18. Garnish with coriander.
19. Serve hot with roti.
