Cauliflower Fried Rice

INGREDIENTS
Oil - 2 tablespoons
Garlic - 1/2 teaspoon
Ginger - 1 teaspoon
Onions - 60 grams
Carrot - 90 grams
Green peas - 60 grams
Spring onions - 60 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Soy sauce - 45 milliliters
Grated cauliflower - 340 grams
Eggs - 2
Spring onions - for garnishing
PREPARATION
1. Heat 2 tablespoons oil in a heavy pot, add 1/2 teaspoon garlic, 1 teaspoon ginger and saute for 1 - 2 minutes.
2. Add 60 grams onions and fry till translucent.
3. Then, add 90 grams carrot, 60 grams green peas, 60 grams spring onions and saute the veggies for 5 - 7 minutes.
4. Now, add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 45 milliliters soy sauce and stir well.
5. Add 340 grams grated cauliflower and mix it well.
6. Cook or another 3 - 5 minutes.
7. Now, add 2 eggs and mix it well.
8. Garnish with spring onions.
9. Serve.
