Cream Of Broccoli Soup

 

Servings - 3

 

INGREDIENTS
Olive oil - 2 teaspoons

Garlic - 1 teaspoon

Onions - 50 grams

Broccoli - 130 grams

Water - 700 milliliters

Salt - 1/4 teaspoon
Butter - 2 teaspoons

All purpose flour - 1 1/2 tablespoons

Milk - 300 milliliters

Salt - 1/4 teaspoon

Black pepper powder - 1/4 teaspoon

Cumin powder - 1/4 teaspoon

Garam masala - 1/4 teaspoon

Fresh cream - for garnishing

Blanched broccoli - for garnishing

 

PREPARATION

  1. Heat 2 teaspoons olive oil in a skillet, add 1 teaspoon garlic and stir well.
  2. Then, add 50 grams onions and fry till translucent or until it turns golden brown in color.
  3. Now, add 130 grams broccoli and mix it well.
  4. Cook for 5 - 7 minutes on medium heat.
  5. Add 700 milliliters water, 1/4 teaspoon salt and mix it well.
  6. Cover it with lid and cook for about 7 - 8 minutes on medium heat.
  7. Open the lid and remove it from heat.
  8. Transfer this into a blender and blend it into a puree. Keep aside.
  9. Heat 2 teaspoons butter in a heavy skillet, add 1 1/2 tablespoons all purpose flour and mix it well.
  10. Then, add 300 milliliters milk and mix it well.
  11. Bring it to a boil.
  12. Now, add the blended puree and mix it well.
  13. Cook for 5 - 7 minutes on medium heat.
  14. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper powder, 1/4 teaspoon cumin powder, 1/4 teaspoon garam masala and mix it well.
  15. Cook for another 3 - 5 minutes on medium heat.
  16. Remove it from heat.
  17. Garnish with fresh cream and blanched broccoli.
  18. Serve hot.
