Gobi Soya Korma

INGREDIENTS
Soya granules - 80 grams
Hot water
Oil - 1 tablespoon
Cauliflower - 150 grams
Oil - 1 tablespoon
Cloves - 4
Cardamom - 2
Cinnamon stick - 1/2 inch
Bay leaf - 1
Onions - 70 grams
Garlic - 1 teaspoon
Tomato - 170 grams
Green chili - 1 tablespoon
Ginger - 1 teaspoon
Coriander powder - 1 teaspoon
Cumin powder - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Paprika - 1 teaspoon
Salt - 1/2 teaspoon
Water - 125 milliliters
Garam masala - 1/4 teaspoon

 

PREPARATION


1. Soak 80 grams soya granules in hot water for 10 - 15 minutes.
2. Heat 1 tablespoon oil in a heavy skillet, add 150 grams cauliflower and saute for 5 - 10 minutes to dry it up and to lightly toast it. Take it out and keep aside.
3. Heat 1 tablespoon oil in another heavy skillet, add 4 cloves, 2 cardamom, 1/2 inch cinnamon stick, 1 bay leaf, 70 grams onions and saute till onions are lightly browned.
4. Add 1 teaspoon garlic, 170 grams tomato and mix well.
5. Add 1 tablespoon green chili, 1 teaspoon ginger, 1 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon turmeric, 1 teaspoon paprika and 1/2 teaspoon salt. Mix well and let it cook till tomatoes go mushy and start releasing oil.
6. Add 125 milliliters water and let it come to a boil.
7. Add 80 grams soaked soya granules and mix well. Cook for 10 - 15 minutes till most of the water evaporates.
8. Add 150 grams cauliflower, 1/4 teaspoon garam masala and mix well. Cook for 5 - 6 minutes.
9. Serve hot.
