Dry red chili - 3
Water - 70 milliliters
Coriander - 50 grams
Garlic - 2 tablespoons
Onions - 200 grams
Green chili - 20 grams
Oil - 60 milliliters
Cumin - 1 teaspoon
Ginger - 25 grams
Salt - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Dry mango powder - 1 teaspoon
Garam masala - 1/2 teaspoon
Potatoes - 470 grams
Cauliflower - 600 grams
Black pepper - 1/2 teaspoon
Lemon juice - 1 tablespoon
Coriander - 2 tablespoons
Ginger - for garnishing
PREPARATION
1. In a bowl, add 3 dry red chili, 70 milliliters water and soak for 30 minutes.
2. In a blender, add 50 grams coriander, 2 tablespoons garlic, 200 grams onions, 20 grams green chili, soaked chili and blend it into a smooth puree.
3. Heat 60 milliliters oil in a heavy skillet, add 1 teaspoon cumin, 25 grams ginger and stir for 1 - 2 minutes.
4. Then, add the blended paste in it and mix it well.
5. Add 1 teaspoon salt, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon dry mango powder, 1/2 teaspoon garam masala and mix it again.
6. Cook for 5 - 7 minutes on medium heat.
7. Now, add 470 grams potatoes, 600 grams cauliflower and mix it well.
8. Cover it with lid and cook for about 10 - 20 minutes on medium heat.
9. Open the lid and give it a nice stir.
10. Add 1/2 teaspoon black pepper, 1 tablespoon lemon juice, 2 tablespoons coriander and mix it well.
11. Cook for 3 - 5 minutes on medium heat.
12. Remove it from heat.
13. Garnish with ginger.
14. Serve.
