Karela ( Bitter Melon) Stir Fry

INGREDIENTS

Bitter melon - 250 grams

Oil - 2 teaspoons

Onions - 100 grams

Potatoes - 150 grams

Salt - 1 teaspoon

Red chili powder - 1 teaspoon

Dry mango powder - 1 teaspoon

Coriander powder - 1 teaspoon

PREPARATION

1. Peel the bitter melons and slice them in rounds.

2. Heat sufficient oil in a heavy skillet. Add 250 grams bitter melon and fry till it is partially cooked and crisp. Drain on absorbent paper.

3. Heat 2 teaspoons oil in a pan. Add 100 grams onions, 150 grams potatoes, 1 teaspoon salt and saute till light golden.

4. Now add 250 grams of fried bitter melon, 1 teaspoon red chili powder, 1 teaspoon dry mango powder, 1 teaspoon coriander powder and cook for 3 - 5 minutes.

5. Serve hot with rice or roti.
