Lauki Ka Bharta

INGREDIENTS
Bottle gourd - 530 grams

Water - 1.3 litres

Oil - 35 milliliters

Cumin - 1 teaspoon

Ginger - 2 teaspoons

Garlic - 2 teaspoons

Green chili - 1 1/2 teaspoons

Onions - 235 grams

Tomato - 300 grams

Turmeric - 1/2 teaspoon

Salt - 1 teaspoon

Paprika - 1/2 teaspoon

Coriander powder - 1 teaspoon

Red chili - 1/2 teaspoon

Green peas - 90 grams

Garam masala - 1/2 teaspoon

Sugar - 1/4 teaspoon

Coriander - 1 tablespoon

 

PREPARATION

  1. Take a skillet, add 530 grams bottle gourd, 1.3 litres water and bring it to a boil.
  2. Cover it with lid and cook for about 10 - 15 minutes on medium heat.
  3. Open the lid and remove it from heat.
  4. Drain the bottle gourds and transfer this into a bowl.
  5. Mash the bottle gourd properly with the help of a food masher and keep aside.
  6. Heat 35 milliliters oil in a skillet, add 1 teaspoon cumin, 2 teaspoons ginger, 2 teaspoons garlic, 1 1/2 teaspoons green chili and stir for 2 - 3 minutes.
  7. Then, add 235 grams onions and fry till translucent or until it turns golden brown in color.
  8. Now, add 300 grams tomato and mix it well.
  9. Cover it with lid and cook for about 5 - 7 minutes on medium heat.
  10. Open the lid and give it a nice stir.
  11. Add 1/2 teaspoon turmeric and mix it well.
  12. Add 1 teaspoon salt, 1/2 teaspoon paprika, 1 teaspoon coriander powder, 1/2 teaspoon red chili and mix it well.
  13. Then, add 90 grams green peas and mix it again.
  14. Cook for 5 - 7 minutes on medium heat.
  15. Now, add the mashed bottle gourd in it and mix it well.
  16. Cover it with lid and cook for about 8 - 10 minutes on medium heat.
  17. Open the lid and give it a nice stir.
  18. Add 1/2 teaspoon garam masala, 1/4 teaspoon sugar and mix it well.
  19. Cook for 3 - 5 minutes on medium heat.
  20. Add 1 tablespoon coriander and mix it again.
  21. Cook for another 3 - 5 minutes on medium heat.
  22. Remove it from heat.
  23. Serve hot.
