No Onion No Garlic Palak Paneer Kofta

 

Servings - 2 - 3

 

INGREDIENTS
Gram flour - 40 grams

Grated paneer - 250 grams

Salt - 1/2 teaspoon

Red chili - 1/2 teaspoon

Garam masala - 1/2 teaspoon

Carom seeds - 1/4 teaspoon

Water - 1.5 litres

Spinach - 400 grams

Oil - 30 milliliters

Ginger - 2 tablespoons

Tomato - 300 grams

Green chili - 2 tablespoons

Salt - 1 teaspoon

Paprika - 1/2 teaspoon

Cumin powder - 1/2 teaspoon

Coriander powder - 1/2 teaspoon

Garam masala - 1/2 teaspoon

Butter - 25 grams

Fresh cream - 60 grams

 

PREPARATION

  1. Take a pan, add 40 grams gram flour and dry roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
  2. Remove it from heat and keep aside.
  3. In a mixing bowl, add 250 grams grated paneer, 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/2 teaspoon garam masala, 1/4 teaspoon carom seeds and mix it well.
  4. Take some mixture in your hands and roll it into a ball.
  5. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
  6. Drain it on an absorbent paper and keep aside.
  7. Take a heavy skillet, add 1.5 litres water, 400 grams spinach and mix it well.
  8. Bring it to a boil.
  9. Boil for 5 - 7 minutes on medium heat.
  10. Remove it from heat and transfer this into a blender.
  11. Blend it into a puree and keep aside.
  12. Heat 30 milliliters oil in a skillet, add 2 tablespoons ginger and stir well.
  13. Then, add 300 grams tomato, 2 tablespoons green chili and mix it well.
  14. Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
  15. Add 1 teaspoon salt, 1/2 teaspoon paprika, 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/2 teaspoon garam masala and mix it well.
  16. Cook for another 5 - 7 minutes on medium heat.
  17. Remove it from heat and transfer this into a blender.
  18. Blend it into a puree.
  19. Heat 25 grams butter in a another skillet, add the blended tomato puree in it and stir well.
  20. Then, add the blended spinach puree and mix it well.
  21. Cook for 3 - 5 minutes on medium heat.
  22. Add 60 grams fresh cream and mix it well.
  23. Now, add the fried koftas in it and mix it well.
  24. Cook for 5 - 7 minutes on medium heat.
  25. Remove it from it.
  26. Garnish with fresh cream.
  27. Serve hot.
