(For Koftas)
Grated cauliflower - 250 grams
Gram flour - 80 grams
Ginger garlic paste - 1 teaspoon
Salt - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Red chili - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Green chili - 1 teaspoon
Coriander - 1 tablespoon
Oil - for frying
(For Puree)
Oil - 1 tablespoon
Onions - 150 grams
Ginger - 1 tablespoon
Garlic - 1 tablespoon
Green chili - 1 tablespoon
Tomato - 200 grams
Cashews - 2 teaspoons
Salt - 1/2 teaspoon
Water - 2 tablespoons
(For Shahi Gobi Kofta)
Oil - 2 tablespoons
Cinnamon stick - 1
Cloves - 2
Green cardamom - 2 pods
Cumin - 1 teaspoon
Asafoetida - 1/4 teaspoon
Salt - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Red chili - 1 teaspoon
Black pepper - 1/4 teaspoon
Coriander powder - 1 teaspoon
Cumin powder - 1 teaspoon
Sugar - 1/2 teaspoon
Water - 150 milliliters
Fresh cream - 30 milliliters
Garam masala - 1 teaspoon
Coriander - 1 tablespoon
PREPARATION
(For Koftas)
1. In a mixing bowl, add all the ingredients and mix it well.
2. Take some mixture in your hands and shape it into a lemon sized ball.
3. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
4. Drain it on an absorbent paper and keep aside.
(For Puree)
1. Heat 1 tablespoon oil in a pan, add 150 grams onions and fry till translucent.
2. Add 1 tablespoon ginger, 1 tablespoon garlic, 1 tablespoon green chili and stir well.
3. Now, add 200 grams tomato and mix it well.
4. Cook for 3 - 5 minutes on medium heat.
5. Add 2 teaspoons cashews, 1/2 teaspoon salt and mix it well.
6. Add 2 tablespoons water and mix it again.
7. Cook for 5 - 7 minutes on medium heat.
8. Remove it from heat and transfer this into a blender.
9. Blend it into a puree. Keep aside.
(For Shahi Gobi Kofta)
1. Heat 2 tablespoons oil in a pan, add 1 cinnamon stick, 2 pods cloves, 2 pods green cardamom, 1 teaspoon cumin, 1/4 teaspoon asafoetida and stir for 2 - 3 minutes.
2. Then, add the blended puree and mix it well.
3. Cook for 5 - 7 minutes on medium heat.
4. Add 1/2 teaspoon salt, 1/2 teaspoon turmeric, 1 teaspoon red chili, 1/4 teaspoon black pepper, 1 teaspoon coriander powder, 1 teaspoon cumin powder and mix it well.
5. Cover it with lid and cook for about 10 minutes on medium heat.
6. Open the lid and give it a nice stir.
7. Add 1/2 teaspoon sugar and mix it well.
8. Now, add 150 milliliters water and mix it well.
9. Again cover it with lid and cook for about 10 minutes on medium heat.
10. Open the lid and give it a nice stir.
11. Then, add 30 milliliters fresh cream and mix it well.
12. Now, add the fried koftas and mix it well.
13. Cook for 5 - 7 minutes on medium heat.
14. Add 1 teaspoon garam masala and mix it well.
15. Add 1 tablespoon coriander and mix it again.
16. Cook for another 3 - 5 minutes on medium heat.
17. Remove it from heat.
18. Garnish with coriander.
19. Serve hot.
