INGREDIENTS

Ghee - 1 tablespoon
Cumin - 1 teaspoon
Bottle gourd - 300 grams
Salt - 1 teaspoon
Turmeric - 1/2 teaspoon
Red chili - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Water - 150 milliliters
Oil - 1 teaspoon
Bay leaf - 1
Cinnamon stick - 1
Onions - 150 grams
Ginger - 1 tablespoon
Garlic - 1 tablespoon
Green chili - 1 tablespoon
Tomato - 200 grams
Cashews - 1 tablespoon
Salt - 1/2 teaspoon
Butter - 2 tablespoons
Turmeric - 1/2 teaspoon
Red chili - 1/2 teaspoon
Coriander powder - 1 teaspoon
Fresh cream - 30 milliliters
Water - 50 milliliters
Coriander - 1 tablespoon
PREPARATION
1. Take a pressure cooker, add 1 tablespoon ghee, 1 teaspoon cumin and stir well.
2. Then, add 300 grams bottle gourd, 1 teaspoon salt, 1/2 teaspoon turmeric, 1/2 teaspoon red chili, 1/2 teaspoon coriander powder and mix it well.
3. Add 150 milliliters water and mix it well.
4. Cover it with lid and cook until you hear 2 - 3 whistles.
5. Open the lid and remove it from heat.
6. Heat 1 teaspoon oil in a pan, add 1 bay leaf, 1 cinnamon stick and stir well.
7. Then, add 150 grams onions and fry till translucent.
8. Add 1 tablespoon ginger, 1 tablespoon garlic, 1 tablespoon green chili and stir for 1 - 2 minutes.
9. Now, add 200 grams tomato and mix it well.
10. Add 1 tablespoon cashews, 1/2 teaspoon salt and mix it well.
11. Cover it with lid and cook for about 10 minutes on medium heat.
12. Open the lid and give it a nice stir.
13. Remove it from heat and transfer this into a blender.
14. Blend it into a puree.
15. Heat 2 tablespoons butter in a skillet, add the blended puree in it and mix it well.
16. Add 1/2 teaspoon turmeric, 1/2 teaspoon red chili, 1 teaspoon coriander powder and mix it well.
17. Cook for 5 - 7 minutes on medium heat.
18. Then, add 30 milliliters fresh cream and mix it well.
19. Add 50 milliliters water and mix it again.
20. Cover it with lid and cook for about 5 minutes on medium heat.
21. Open the lid and give it a nice stir.
22. Now, add the cooked bottle gourd in it and mix it well.
23. Cook for 5 - 7 minutes on medium heat.
24. Add 1 tablespoon coriander and mix it well.
25. Remove it from heat.
26. Garnish with coriander.
27. Serve hot.
