Stir Fry Tofu With Rice & Vegetables

INGREDIENTS

Tofu - 250 grams

Soy sauce - 2 tablespoons

Agave nectar - 2 tablespoons

Sesame oil - 1 tablespoon

Ginger garlic paste - 2 teaspoons

Oil - 2 tablespoons

Garlic - 1 teaspoon

Ginger - 1 teaspoon

Green onions - 130 grams

Bell pepper - 200 grams

Cooked brown rice - 500 grams

Soy sauce - 2 tablespoons

Sesame oil - 1 teaspoon

Salt - 1 teaspoon

Black pepper - 1 teaspoon

Green onions - for garnishing

PREPARATION

1. In a mixing bowl, add 250 grams tofu, 2 tablespoons soy sauce, 2 tablespoons agave nectar, 1 tablespoon sesame oil, 2 teaspoons ginger garlic paste and mix it well.

2. Marinate for 20 - 30 minutes.

3. Place it on a baking tray and spread evenly.

4. Preheat the oven to 400°F/200°C. Bake for 20 minutes.

5. Remove it from oven and keep aside.

6. Heat 2 tablespoons oil in a heavy skillet, add 1 teaspoon garlic, 1 teaspoon ginger and saute for a minute.

7. Add 130 grams green onions and fry till translucent.

8. Then, add 200 grams bell pepper and mix it well. Cook for 5 - 7 minutes.

9. Now, add the baked tofu in it and mix it well.

10. Add 500 grams cooked brown rice, 2 tablespoons soy sauce, 1 teaspoon sesame oil, 1 teaspoon salt, 1 teaspoon black pepper and mix it well.

11. Cook for another 5 - 7 minutes.

12. Garnish with green onions.

13. Serve hot.
