Veg Chop Suey

Servings - 2

INGREDIENTS

Water - 2 litre, divided

Noodles - 200 grams

Corn flour - 100 grams

Oil - 50 milliliters

Onions - 70 grams

Cabbage - 100 grams

Green beans - 20 grams

Carrot - 50 grams

Bell pepper - 150 grams

Broccoli - 20 grams

Salt - 1 teaspoon

Green chili sauce - 1 tablespoon

Red chili sauce - 1 tablespoon

Ketchup - 100 milliliters

Vinegar - 1 teaspoon

Soy sauce - 1 teaspoon

Pineapple - 50 grams

Corn flour paste - 2 tablespoons

PREPARATION

1. Heat 11/2 litre of water in a heavy skillet. Add 200 grams noodles and boil until almost cooked.

2. Remove, drain and cool. Add 100 grams corn flour and mix well.

3. Heat sufficient oil in a heavy skillet and deep fry in hot oil till light brown and crisp.

4. Heat 50 milliliters of oil in a pan. Add 70 grams onions, 100 grams cabbage, 20 grams green beans, 50 grams carrot, 150 grams bell pepper, 20 grams broccoli and stir.

5. Add 1 teaspoon salt, 1 tablespoon green chili sauce, 1 tablespoon red chili sauce, 100 milliliters of ketchup, 1 teaspoon vinegar, 1 teaspoon soy sauce and stir.

6. Add 500 milliliters of water, bring it to boil and then add 50 grams pineapple, 2 tablespoons corn flour paste and stir well.

7. Serve hot with fried noodles.
