Veg Fried Rice

INGREDIENTS
Water - 2 litres
Rice - 250 grams
Vinegar - 1 tablespoon
Butter - 3 tablespoons, divided
Carrot - 100 grams
Onions - 50 grams
Garlic - 1 teaspoon
Salt - 1 1/2 teaspoons
White Pepper - 1/2 teaspoon
Green onions - 30 grams
Green peas - 100 grams
Corn - 100 grams
Soy sauce - 2 tablespoons
PREPARATION
1. Wash 250 grams rice till the water runs clear. Soak for at least 10 minutes.
2. Pour 2 litres water into a pot. Bring to a boil.
3. Add 250 grams washed rice, 1 tablespoon vinegar into the boiling water and stir.
4. Cook for 15 - 20 minutes. Remove it from the heat.
5. Heat 1 1/2 tablespoons butter in a heavy skillet, add 100 grams carrot, 50 grams onions, 1 teaspoon garlic, 1 1/2 teaspoons salt and 1/2 teaspoon white pepper. Saute for about 5 minutes or until the onions and carrots are soft.
6. Add 1 1/2 tablespoons butter and stir until melted. Immediately add the cooked rice, 30 grams green onion, 100 grams green peas, 100 grams corn, 2 tablespoons soy sauce and stir until combined.
7. Continue stirring for 3 minutes to fry the rice.
8. Serve hot and enjoy.
