Veg Moti Pulao

INGREDIENTS

Grated paneer - 350 grams

Boiled mashed potatoes - 100 grams

Bread crumbs - 2 tablespoons

Cashew powder - 2 tablespoons
Salt - 1 teaspoon

Cardamom powder - 1/4 teaspoon

Oil - for frying

Warm milk - 45 milliliters

Saffron - 1/2 teaspoon

Rice - 200 grams

Water - 400 milliliters

Ghee - 1 tablespoon

Cashews - 20 grams

Almonds - 20 grams

Ghee - 1 tablespoon

Cloves - 3 pods

Black peppercorns - 5

Black cardamom - 1 pod

Green cardamom - 3 pods

Bay leaf - 1

Cumin - 1 teaspoon

Water - 450 milliliters

Salt - 1 teaspoon

Red chili - 1/4 teaspoon

Fried onions - 30 grams

Mint - 1 tablespoon

Coriander - 1 tablespoon

 

PREPARATION

  1. In a mixing bowl, add 350 grams grated paneer, 100 grams boiled mashed potatoes, 2 tablespoons bread crumbs, 2 tablespoons cashew powder, 1 teaspoon salt, 1/4 teaspoon cardamom powder and mix it well.
  2. Take some mixture in your hands and shape it into a ball.
  3. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy.
  4. Drain it on an absorbent paper. Keep aside.
  5. In a bowl, add 45 milliliters warm milk, 1/2 teaspoon saffron and mix it well.
  6. Soak for 30 minutes.
  7. In a another bowl, add 200 grams rice, 400 milliliters water and soak for 20 minutes.
  8. Heat 1 tablespoon ghee in a pan, add 20 grams cashews, 20 grams almonds and roast for 5 - 7 minutes on medium heat or until it turns golden brown in color.
  9. Remove it from heat and keep aside.
  10. Heat 1 tablespoon ghee in a skillet, add 3 pods cloves, 5 black peppercorns, 1 pod black cardamom, 3 pods green cardamom, 1 bay leaf, 1 teaspoon cumin and stir for 1 - 2 minutes.
  11. Then, add the soaked rice and mix it well.
  12. Now, add 450 milliliters water and mix it again.
  13. Bring it to a boil.
  14. Add 1 teaspoon salt, 1/4 teaspoon red chili and mix it well.
  15. Cover it with lid and cook for about 12 - 15 minutes on medium heat.
  16. Open the lid, add soaked saffron milk, 30 grams fried onions, roasted nuts and mix it well.
  17. Again cover it with lid and cook for about 5 minutes.
  18. Open the lid, add fried paneer balls, 1 tablespoon mint, 1 tablespoon coriander and mix it well.
  19. Cook for another 3 - 5 minutes on medium heat.
  20. Remove it from heat.
  21. Serve hot.
