Green Protein Roti

Servings - 5

INGREDIENTS
Water - 500 milliliters
Spinach -  400 grams 
Paneer - 150 grams 
Ginger - 1 tablespoon
Green chili - 1 tablespoon
Water - 100 milliliters
Wheat flour - 350 grams 
Salt - 1/2 teaspoon
Desi ghee - 1 teaspoon

PREPARATION


1. Boil 500 milliliters water in a pan, add 400 grams spinach and blanch for 2 - 3 minutes.
2. Remove from heat and transfer to a blender. Add 150 grams paneer, 1 tablespoon ginger, and 1 tablespoon Green Chili. Blend until smooth.
3. In a bowl, add 350 grams wheat flour, 1/2 teaspoon salt and the blended puree. Mix and knead into a soft dough. Rest for 10 minutes.
4. Dust some wheat flour on a rolling board, place a portion of the dough, and flatten it with your hands.
5. Roll it out gently with a rolling pin into a chapati shape.
6. Heat a pan and cook the roti for 1–2 minutes. Flip and cook until golden brown on both sides.
7. Remove from the pan and place on a serving plate. Drizzle desi ghee on top.
8. Serve hot  with curd.
