Healthy Paneer Rice Bowl

Salt - 1/2 teaspoon
Red chili - 1/2 teaspoon
Peri peri masala - 1/4 teaspoon
Coriander - 1 teaspoon
Paneer slices - 150 grams
Oil - 1 tablespoon

Carrots - 40 grams
Green bell pepper - 40 grams
Red bell pepper - 20 grams
Sweet corns - 50 grams
Oregano - 1 teaspoon
Chilli flakes - 1 teaspoon
Salt - 1/4 teaspoon
Boiled rice - 350 grams
Coriander - 1 tablespoon
Black pepper - 1/8 teaspoon
Hung curd - 60 grams
Peri peri masala - 1/8 teaspoon
Salt - 1/4 teaspoon
Coriander - 1 teaspoon
Cucumber - 100 grams
PREPARATION
1. In a bowl, add 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/4 teaspoon peri peri masala, and 1 teaspoon coriander. Mix well.
2. Add 150 grams paneer slices and coat them evenly with the prepared masala.
3. Heat 1 tablespoon oil in a pan, add the coated paneer slices and cook for 2 - 4 minutes or until golden brown on all sides.
4. Remove from heat and keep aside.
5. Heat 1 tablespoon oil in a pan, add 40 grams carrots, 40 grams green bell pepper, 20 gram red bell pepper, and 50 grams sweet corns. Sauté for 2 - 3 minutes.
6. Add 1 teaspoon oregano, 1 teaspoon chilli flakes, 1/4 teaspoon salt, 350 grams boiled rice, 1 tablespoon coriander, and 1/8 teaspoon black pepper. Mix and cook for 1 minute.
7. Remove from heat and keep aside.
8. In a bowl, add 60 grams hung curd, 1/8 teaspoon peri peri masala, 1/4 teaspoon salt, and 1 teaspoon coriander. Mix well.
9. Add 100 grams cucumber and mix well to prepare the salad.
10. Serve the rice with paneer and alongside the fresh salad.
