Split Yellow Mung beans - 150 grams
Water - 500 milliliters
Oil - 1 teaspoon
Onions - 30 grams
Bell pepper - 30 grams
Sweet corns - 30 grams
Paneer - 35 grams
Black pepper - 1/4 teaspoon
Chilli flakes - 1/4 teaspoon
Oregano - 1/4 teaspoon
Schezwan sauce - 1 teaspoon
Ginger - 1 tablespoon
Green Chili - 3
Salt - 1 teaspoon
Water - 70 milliliters
Spinach - 15 grams
Schezwan sauce - 1 tablespoon
Mozzarella cheese - 70 grams
PREPARATION
1. In a bowl, add 150 grams split yellow mung beans and 500 milliliters water. Soak for 1 hour.
2. Heat 1 teaspoon oil in a pan, add 30 grams onions, 30 grams bell pepper, and 30 grams sweet corns. Sauté for 30 seconds.
3. Add 35 grams paneer, 1/4 teaspoon black pepper, 1/4 teaspoon chilli flakes, 1/4 teaspoon oregano, and 1 tablespoon schezwan sauce. Mix and cook for 1 minute.
4. Remove from heat and keep aside.
5. Transfer the soaked mung beans to a blender. Add 1 tablespoon ginger, 3 Green Chili, 1 teaspoon salt, and 70 milliliters water. Blend until smooth.
6. Pour into a bowl, add 15 grams spinach and mix well.
7. Spread the batter evenly onto a heated pan. Cover and cook for 4–5 minutes, or until the base is set.
8. Flip gently. Spread a little Schezwan sauce over the surface, then evenly add the prepared vegetable mixture.
9. Top with mozzarella cheese. Cover and cook for 5–7 minutes, or until the cheese melts.
10. Remove from heat and cut into slices.
11. Serve hot.
